It's uncertain why there would be such a connection, but the study authors speculated that rice, a staple of gluten-free eating, may be the vehicle. Only one percent of Americans suffer from this disorder, but nearly one quarter of the American population reported switching to a diet which is free of the protein.

In order to compensate, gluten-free products oftentimes contain rice flour as a substitute for barley, rye, and wheat.

These metals, which include arsenic and mercury, get into the rice from fertilizers, soil and water. This ingredient is used for most of the gluten free products available on the market.

While the findings are preliminary, this study suggests that the possible risks of gluten-free diets may weigh more than the clinically unproven, yet much-hyped, benefits.

For the study, researchers from the University of IL at Chicago, University of Chicago, University of MI and Dartmouth University looked at 7,471 participants in the National Health and Nutrition Examination Survey conducted between 2009 and 2014.

Could the gluten-free diet craze be exposing people to excessive levels of arsenic and mercury? Mercury levels were a shocking 70 percent higher in gluten-free participants, and arsenic levels were found to be almost twice the normal amount.

While Europe has regulations that monitor the level of arsenic in its food, the study points out that the United States has no such restrictions in place. More precisely, rice flour usually accumulates toxic metals which increase the risk of neurological illness, heart disease, and cancer.

People suffering from celiac disease, a chronic digestive condition that triggers an abnormal immune response to gluten, find relief by avoiding foods containing wheat, barley, and rye. Going gluten-free? A new study shines some light on potentially unwanted side effects of skipping that morning bagel. Still, more research is needed before any conclusions can be made about the dangers of gluten-free eating.
